Preparation:

- Remove the eggs with a slotted spoon and set aside.
Toast the bread
- While the eggs are poaching, toast the bread slices until they are golden and crispy. Then, spread the avocado mixture evenly over the toasted bread.
Assemble and serve
- Put one poached egg on each slice of avocado toast. Add more salt, pepper, and red pepper flakes if you like. Serve right away.
