Ingredients:

For the Brisket:

  • 4-5 lbs beef brisket (trimmed of excess fat)

For the BBQ Rub:

  • 2 tablespoons brown sugar
  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)

For the BBQ Sauce:

  • 1 cup ketchup
  • 1/4 cup apple cider vinegar
  • 1/4 cup brown sugar
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon chili powder
  • 1/4 cup water
Instructions:
  1. Prepare the Brisket:
    • Preheat your oven to 300°F (150°C).
    • Pat the brisket dry with paper towels and rub it with olive oil.
    • Mix all the BBQ rub ingredients in a bowl. Generously coat the brisket with the rub, ensuring it’s evenly covered on all sides.
  2. Roast the Brisket:
    • Place the brisket in a roasting pan or baking dish, fat side up. Cover tightly with aluminum foil.
    • Roast in the oven for 3-4 hours, or until the internal temperature reaches 190°F (88°C) for tenderness.
  3. Prepare the BBQ Sauce:
    • While the brisket is roasting, combine all BBQ sauce ingredients in a saucepan.
    • Bring to a simmer over medium heat, stirring occasionally. Let it simmer for 10 minutes until thickened. Set aside.
  4. Glaze the Brisket:
    • After 3-4 hours, remove the foil and brush the brisket generously with the BBQ sauce.
    • Increase the oven temperature to 350°F (175°C) and roast uncovered for an additional 30-45 minutes, basting with sauce every 15 minutes, until caramelized and sticky.
  5. Rest and Serve:
    • Remove the brisket from the oven and let it rest for 20 minutes before slicing against the grain.
