  • 4 large eggs
  • 1 tablespoon white vinegar (optional)
  • Salt and pepper to taste

Preparation:

  6. Remove the eggs with a slotted spoon and set aside.

Toast the bread

  1. While the eggs are poaching, toast the bread slices until they are golden and crispy. Then, spread the avocado mixture evenly over the toasted bread.
Assemble and serve
  1. Put one poached egg on each slice of avocado toast. Add more salt, pepper, and red pepper flakes if you like. Serve right away.
