Crispy Tofu Stir-Fry with Vegetables

Ingredients:

Crispy tofu:

  • 400g firm tofu, drained and cubed
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil (for frying)

Stir-fry:

  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 zucchini, sliced
  • 1 carrot, julienned
  • 1 onion, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon hoisin sauce
  • 1 garlic clove, minced
  • 1 teaspoon ginger, minced
  • 1 tablespoon sesame seeds (optional for garnish)
  • Green onions, chopped (optional for garnish)

Stir-fry sauce:

  • 1/4 cup soy sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon cornstarch
  • 1 teaspoon maple syrup or honey

Preparation:

Prepare the crispy tofu

  1. Drain the tofu and press it for at least 10 minutes to remove excess moisture. Cut into cubes.
  2. Toss the tofu cubes in soy sauce, then lightly coat them with cornstarch.
  3. Heat vegetable oil in a pan over medium heat. Add the tofu cubes and fry for 5-7 minutes, turning occasionally, until golden and crispy. Remove and set aside.

Stir-fry the vegetables

  1. In the same pan, add a little more oil if necessary. Stir-fry the garlic and ginger for about 30 seconds until fragrant.
  2. Add the bell peppers, zucchini, carrot, and onion to the pan. Stir-fry for 3-4 minutes until the vegetables are tender but still crisp.

Step 3: Make the stir-fry sauce

  1. In a small bowl, mix soy sauce, hoisin sauce, rice vinegar, cornstarch, and maple syrup or honey. Pour the sauce into the pan with the vegetables. Stir to coat everything well. Let it thicken for about 1 minute.
  2. Pour the sauce into the pan with the vegetables and stir to coat. Let it thicken slightly, about 1 minute.

Assemble the dish

  1. Add the crispy tofu back to the pan. Stir it with the vegetables and sauce. Garnish with sesame seeds and chopped green onions if you like. Serve the tofu stir-fry right away with your choice of side dishes.
