Ingredients:

  • 100g dark chocolate (70% cacao)
  • 100g unsalted butter
  • 1/2 cup sugar
  • 2 eggs
  • 2 egg yolks
  • 1/4 cup all-purpose flour
  • 1 teaspoon vanilla extract
  • A pinch of salt
  • Powdered sugar or cocoa powder (for dusting)

Preparation:

Prepare the chocolate mixture

  1. Preheat the oven to 200°C (390°F). Grease four individual ramekins with butter and dust with cocoa powder or flour to prevent sticking.
  2. Melt the dark chocolate and butter in a heatproof bowl. You can do this over simmering water or in the microwave. If using the microwave, heat in 30-second intervals until smooth.
  3. In a separate bowl, whisk together the eggs, egg yolks, sugar, vanilla extract, and a pinch of salt until light and fluffy.

Combine and prepare for baking

  1. Slowly fold the melted chocolate into the egg mixture.
  2. Gently stir in the flour until fully incorporated, but avoid overmixing.
  3. Pour the batter into the prepared ramekins, filling them about three-quarters full.

Bake the lava cakes

  1. Place the ramekins on a baking sheet and bake for 10-12 minutes. The edges should be firm, but the center should still be soft and gooey.
  2. Remove from the oven and let the cakes cool for 1 minute before inverting them onto plates.

Serve

  1. Dust with powdered sugar or cocoa powder and serve immediately. You can pair the cakes with vanilla ice cream or fresh berries for extra indulgence.
