Ingredients:

For the beef ribs:

  • 4 beef ribs (about 250g each)
  • 2 tablespoons smoked paprika
  • 2 tablespoons garlic powder
  • 1 tablespoon ground cumin
  • 1 tablespoon brown sugar
  • 2 tablespoons olive oil
  • Salt and pepper to taste

For the grilled vegetables (side dish) :

  • 2 zucchinis, sliced
  • 1 red bell pepper, cut into strips
  • 1 yellow bell pepper, cut into strips
  • 1 red onion, sliced into rings
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 tablespoon balsamic vinegar (optional)

Instructions:

Preparing the beef ribs :

  • In a bowl, mix the smoked paprika, garlic powder, cumin, brown sugar, salt, and pepper.
  • Rub the beef ribs with olive oil, then generously coat them with the spice mixture.
  • Let the ribs marinate for at least 30 minutes to absorb the flavors. For best results, marinate in the refrigerator for 2 hours.

Grilling the beef ribs:

  1. Preheat your BBQ grill to medium-high heat.
  2. Place the beef ribs on the grill and cook for about 6 to 7 minutes per side for medium-rare doneness. Adjust the cooking time based on your preferred level of doneness (rare, medium, well-done).
  3. Once the ribs are done, take them off the grill. Cover them with aluminum foil and let them rest for 5 to 10 minutes. This helps the juices spread evenly.

Preparing the grilled vegetables :

  • While the ribs are cooking, prepare the vegetables. In a bowl, mix the zucchinis, bell peppers, and onions. Add olive oil, salt, pepper, and a bit of balsamic vinegar if you want.
  • Place the vegetables on the grill and cook for 10 to 15 minutes, turning them regularly, until they are nicely charred and tender.

Serving :
